主要成就
長期從事發(fā)酵工程方面的教學(xué)與科研,主要研究方向?yàn)槭称钒l(fā)酵與釀造。主編的教材和專著有《釀酒活性干酵母的生產(chǎn)與應(yīng)用技術(shù)》、《微生物工程原理》、《白灑生產(chǎn)技術(shù)》等,發(fā)表論文300余篇,其中SCI和EI收錄40余篇,申請(qǐng)專利40余項(xiàng),獲得授權(quán)國家發(fā)明專利20余項(xiàng)。在活性干酵母(ADY)和用現(xiàn)代生物技術(shù)改造傳統(tǒng)釀造工藝的研究方面有精深研究,具國際先進(jìn)水平。

研究方向
Ⅰ.利用現(xiàn)代生物技術(shù)改造傳統(tǒng)釀造工業(yè):主要通過釀造微生物功能基因和關(guān)鍵酶系的確定與定向進(jìn)化、微量代謝物質(zhì)的調(diào)節(jié)與控制,提高釀造菌種的生產(chǎn)性能和釀造產(chǎn)品的品質(zhì),促進(jìn)我國傳統(tǒng)釀造工業(yè)模式的改革,提升釀造行業(yè)的生產(chǎn)技術(shù)水平。
Ⅱ.環(huán)境生物技術(shù):主要包括清潔生產(chǎn)工藝、發(fā)酵原料綜合利用、發(fā)酵副產(chǎn)品高值化開發(fā)和發(fā)酵廢棄物的資源化處理等。
Ⅲ.微生物資源的開發(fā)與利用:主要包括生物質(zhì)資源生產(chǎn)燃料乙醇、單細(xì)胞蛋白和生物質(zhì)化學(xué)品,以及活性干酵母、生理活性物質(zhì)等新型生物產(chǎn)品的研究與開發(fā)等。在釀酒活性干酵母、濃醪發(fā)酵生產(chǎn)燃料乙醇和用現(xiàn)代生物技術(shù)改造傳統(tǒng)釀造工業(yè)的研究方面,具國際先進(jìn)水平。
